Description:

We lead our vineyards by following the techniques of organic agricolture: this means without using mineral (chemical) fertilizers! This will cater to the natural processes of symbiosis between plants and bacterias like the organic nitrogen fixation by the Rizobium:

It, when implanted properly in the roots of a legume sown during the fall, captures atmospheric nitrogen and accumulates it in the radicals tuber of the legume plant that will then become totally buried stable humus in the soil. This technique, already used by the ancient Romans, as well as nourish the vine, it also protects the soil from drying out and from microbiological changes, both caused by chemical fertilizers.

In addition, for the vine pest control we use another microorganism, the Bacilus Thuringensis, that kills the moth larvae (Lobesia botrana).

The end result is the production of completely natural grapes, healthy for humans and the environment, that's why we devote much attention to organic farming.

Our vineyards are conducted with one-sided spurred cordon, rows 1.20 m high and 2.20 m between them, with a planting density of 3800 plants per hectare.
The rate of buds per hectare is 57000 approximately, giving an average annual production of 10 t / ha.
The terrain is flat, medium-textured and has the typical climate of our "Tavoliere delle Puglie", with cold winters, long , hot, dry summers, and some rainfalls after the middle of August, and that is good for the grapes ripening.

OUR VARIETIES

Primitivo

This black grape variety is particularly resistant to water shortage and high summer temperatures; it is able to develop a high sugar content and a wide range of fragrances, which make it typical. It ripens in the first decade of September.

Fiano

White grape variety which, even if it prefers hilly areas, has adapted well in the plain where we were able, thanks to a careful management, to get the best of its variety potential, satisfying its water needs in the most critical moments and avoiding the onset of stress. The wine we get from these grapes is particularly rich in flavors typical of the area. It ripens in the second week of September.

Muscat blanc

White grape variety, with an unmistakable scent and a thousand uses. It can be transformed in table wine, sparkling wine and dessert wine. It ripens in early August and its vinification is very sensitive, so it needs special care in checking the temperature of fermentation.

Chardonnay

White grape variety with early ripening in August. It spread in Apulia during the 80s and we were among the first to adopt and "domesticate" it in an very different environment from that which comes from (France). We have succeeded thanks to a managing philosophy that does not merely imitate but that extracts from the vine the best that can be expressed within the territory in which it lives. From it we get a full-bodied, well-structured wine, suitable for aging in barrique.

2009 Primitivo - Primitivo - Red

Red wine made from the Primitivo grape, grown in warm and dry environment.
The low rate of buds per hectare gives rise to grapes rich in aromatic substances which give the wine consistence. Our winemaking for this grape follows the dictates of modern techniques, that are careful to preserve the distinctive aromas of this grape variety.

It is suited with pasta dishes with meat tomato sauces, pork and lamb cooked in the oven or stew, red meat and venison stew with tasty seasoned goat's cheese and spicy food.

2009 Fiano - Chardonnay - White

It is obtained from the ancient and noble Fiano grape, has a straw yellow color and floral scents. But it is the taste that distinguish a fine wine from the everyday wine: by drinking it you will feel its firm, but delicate, character, with honey, pear and dried fruit aromas.

Our Fiano is best suited to accompany appetizers, fish, shellfish and grilled seafood.
