Description:
The Tishbi family's romance with grapes and wine began in 1882 when the present generation's great-grandparents were commissioned by Baron Edmond de Rothschild to plant the first modern wine grape vineyards in Israel. After more than a Century of grape growing tradition, Jonathan Tishbi founded the Tishbi Estate in1984, which produces four series of wines, each offering consistent quality and flavor ,as well as value and style within its class.
Set near Zichron Yaacov, at the foot of the Carmel mountain ridge near the coast, the Tishbi Estate is surrounded by its home vineyards which enjoy the cooling breezes of the Mediterranean Sea. The Tishbi family also plants, grows and harvests premium grapes at higher elevations to the North, to take full advantage of the cool mountain night air and the long sunny Mediterranean growing season ,and in the Negev Desert to the South, where hot arid days and cool windy nights combine with sandy soils to yield superior grapes.
To this day, proprietor Jonathan Tishbi, together with his family, personally supervises the growing, harvesting and bottling processes, tasting and evaluating each vineyard lot separately before creating final blends and award winning wines, sparkling wines and brandy.

The Tishbi Winery includes a tourist center that overlooks the vineyards of the estate. The center was recently built and has a Kosher dairy restaurant with a rich menu based on fresh cheeses from the Yaakob and Meiri dairy farms, fresh vegetables and baked bread right out of the oven.
The wine store in the tourist center offers our guests the best wines of the estate. There is a "filling tank" for visitors to fill wine into containers from their own home. In addition it is possible to purchase accessories and other wine-gadgets and gifts.
The tourist center has guided tours interlaced with explanations about the world of wine and the art of tasting wine.
The center accepts parties and other events for 100 people or more.
There are two areas of the restaurant: a closed porch with sitting for 50 guests and an open-air area with tables and benches in the shade of a roof of vines overlooking part of the Tishbi Estate vineyards. The shaded area accepts about 100 guests.
Weekday hours: 8am until 5pm
Friday hours until 3pm .
The restaurant is strictly kosher under the supervision of the Zichron Yaakov Rabbinate.

We run our tours at 10am, 12pm, and 2pm in English and Hebrew. Each tour costs 15 shekels and is approximately 1 hour with a tasting at the end of the tour .

2009 Chardonnay 2009 Vintage - Chardonnay - White

Varieties: 100% Chardonnay
Wine Notes: This harmonious and balanced wine displays concentrated flavors of apples, pears, white peaches and fresh pineapple. This wine is a perfect accompaniment to cheeses and any dairy cuisine, fish and sushi.
It is recommended to serve this wine chilled at 8-10°C (46-50°F).
Winemaking: This wine is produced from the gently pressed, superior first free-run juice of the grapes. After undergoing a gradual and supervised fermentation, the wine was fermented for three weeks at a low temperature in stainless steel vats followed by its stabilizing process and malolactic fermentation.

Growing Region: The Chardonnay grapes come from vines grown near Zichron Ya’akov. The vineyard location was chosen by the experts of Baron Rothschild century ago which is exactly where the Tishbi vineyards are planted. The vineyards are located at the foot of the Caramel ridge which allows for a constant breeze coming from the Mediterranean Sea to the west. Varieties: 50% Cabernet Sauvignon, 40% Merlot, 10% Cabernet Franc.
Wine Notes: This complex wine is characterized by its especially rich and full body. It possesses a deep red color with purple hues combined with black cherry, blackcurrant, ripe plums, violets, herbs with gentle hints of mint and oak. Its flavors display ripe black plums, mint and oak with nuances of dark chocolate. Its balanced acidity combines excellently with its smoky character derived from aging in French oak, leaving a long lasting finish on the palate. The substantial measure of astringency and acidity in the wine constitutes for an aging potential of the next five to ten years. We suggest serving this wine with beef, goose or lamb.
Winemaking: The grapes were harvested in the early hours of the morning and whilst maintaining a low temperature, were transferred immediately to the stainless steel vats on the winery's premises. After the grapes were left in contact with their skins for two days, specially imported yeast from Bordeaux was added to the temperature-controlled vats. Fermentation of the wine continued for 12 days, the temperature reaching 30ºC (86ºF) on completion of the process. This method of fermentation guarantees the maximum extraction of the grape skins' color, flavor and aroma together with their tannic qualities. After this procedure, the grapes are then separated from their peel, followed by a malolactic fermentation in new French oak barrels. The wine continues to mature in the barrels for a period of 24 months.

Wine Notes: A rich, full-bodied wine expressing concentrated fruit aromas of melon and peach. Possessing a buttery texture with a bouquet of vanilla, caramel and honey derived from its aging in oak barrels. This elegant wine is complex and abundant in tastes also displays a long-lasting finish. Serve this wine as an excellent accompaniment to a roasted leg of lamb or with grilled, filleted fish.
Winemaking: A dry white wine produced from the highest quality vines grown in the Gush Etzion region. This wine was slowly fermented at a low temperature in stainless steel before undergoing partial aging in new American oak barrels for a three month period. This procedure imparts on the wine its exceptionally full body, fruitiness and deep golden color.

Wine Notes: A red wine, carefully chosen to produce this fortified dessert wine. Sweet, but delicate, this wine is dense in consistency although very light. With a velvety texture, it possesses a rich flavor and displays fruity fragrances.
We highly recommend this wine as an accompaniment to goose liver pâté or with a wide selection of desserts. The recommended serving temperature is 8-10°C (46-50°F).
Winemaking: This wine underwent a partial fermentation only in order to retain the sweetness of the grapes, this providing the wine with its natural fruity aroma and flavor. The fermentation was stopped by the addition of alcohol to the wine.

Growing region: The vineyards in Zichron Ya'akov were specially chosen by Baron de Rothschild's experts 100 years ago as the location for the Tishbi family's vineyard estate. The vineyards are situated on the slopes of the Carmel hills, a region enjoying westerly breezes coming from the Mediterranean Sea. The soil is a combination of red and black alluvium together with white limestone. Vineyard elevation reaches 50 meters above sea level.

Wine Notes: This rich and velvety wine carries a fine balance between the aromas of delicious strawberries, cherries, ripe plums, toffee, and mocha coffee beans. This wine was aged in French oak barrels for 12 months.
Winemaking: Produced from the first free-run superior juice, the grapes are gently pressed followed by a three week gradual and supervised fermentation. During this period, the grapes are left with their skins after which, the wine underwent malolactic fermentation. The Shiraz was aged for 12 months in French oak barrels and was bottled unfiltered. Good to drink now and will also continue to improve throughout the coming years.

Growing Region: The grapes were hand-harvested from specific plots in the region of the Judean Hills. This particular area is characterized by its white, chalky, rocky, virgin soil where vines had not been cultivated for 2000 years. The western slopes allow for maximum exposure to light, with the soil possessing excellent drainage. The difference in temperature between day and night assist in the cultivation of grapes which possess a cassis and cranberry aroma, with noticeable, long-lasting tannins.

Wine Notes: Pinot Noir is a gentle and elegant variety that combines the aromatic flavors with refinement. This wine carries substantial aromas of ripe berries, cherries, plums and mocha coffee beans which have been exhausted through the French oak barrels. Velvety texture provides a perfect balance between nose and palate. You can enjoy the wine by itself or accompanied by elegant meals.
Winemaking: The hand-picked grapes were harvested in the early hours of the morning towards the end of the harvest season. The initial fermentation took place in stainless steel vats at a temperature of 22-28°C (78-82°F) for 15 days, continuing its second fermentation in oak barrels of 300 liters for four month.

Growing Region: These Pinot Noir grapes originate from two vineyards in the Gush Etzion region situated at an elevation of 1000 meters above sea level. This region was found to be especially suited to the cultivation of this unique variety due to its extreme cold and snowy winters. Its western-faced, open land with late afternoon winds, allows for a late harvest season from the middle until the end of October. One can find many wild herbs growing in the surrounding black soil releasing fragrances of mint and hyssop.

A special edition of red dessert wine fortified with brandy produced from Red Muscat, produced to celebrate 66 successful harvests of Jonathan Tishbi.
Vineyard: Kfar Yuval
Varieties: 50% Barbera, 50% Zinfandel
Wine Notes: A red sweet wine fortified with brandy which will be a perfect accompaniment to any aperitif, digestif, or in the preparation of any gourmet dishes. The wine displays aromas of cassis, blackcurrant, liquorices, caramel and dark chocolate. One can senses in the flavor, hints of dried plums, quinces, forest berries, ripe cherries and roasted nuts. Whilst possessing strong fragrances and color, this wine is also soft, delicate and herbaceous.
Winemaking: Fortified with brandy made from Red Muscat, this wine was distilled using our Alembic distiller from Cognac, before undergoing its aging in sun aged in oak barrels for a period of 18 months. This aging imparts on the wine its distinct character and very special flavors.

Growing Region: Kfar Yuval. The climate in the northern Galilee is characterized by its quota of cold weather. The red soil in the vineyard on Kfar Yuval, at one time, interfaced with the waters of the Hula Lake. The soil is exceptionally rich and airy, excelling in its drainage qualities. Its airy quality is thanks to the small rivers scattered in the area – similar to that in the region of "Haute-Medoc" in Bordeaux or in "Côte-Rotie" in the Rhone Valley in France. The abundance of minerals and their intensity is what characterizes the wines produced from grapes grown in Kfar Yuval.

This wine is good for drinking now and long aging potential in a cool dark place
Winemaking: The grapes were selectively hand-harvested, produced from free-run juice and were aged for 12 months in French oak barrels. The initial fermentation took place in stainless steel vats at a temperature of 22-28°C (78-82°F) for 3 weeks, with the shells in the tank for two of those weeks. This wine is unfiltered.

The grapes from the Judean Hills posses extremely concentrated and powerful fruit flavors, providing the wine with its excellent aging potential.

Wine Notes: A refined and elegant wine with powerful colors. It shows prominent flavors of plums, liquorices, black tea, cassis, cherry, sweet vanilla and chocolate aromas all coming from its aging process in oak barrels. This wine is good for drinking now and possesses a long aging potential.
Winemaking: This dry red wine is produced from the high quality juice from the first pressing of the grapes. During this process the grapes fermented for two weeks with their skins at a carefully controlled temperature in order to preserve the wide range of flavors nature offers. The wines from each vineyard were fermented in separate vats (as a single vineyard) and were aged in separate oak barrels, the blends being created during the aging process. Oak barrels are used for aging these wines for 12 months and the wines are unfiltered.

Thanks to the Tishbis' meticulous and professional supervision, Kibbutz Sde Boker succeeded in cultivating and developing a superior unique vineyard growing Merlot grapes. The vineyard possesses a complex and sophisticated irrigation system, assuring that the vines receive the exact amount of water according to their specific needs. The micro-climate in this region provides strong sunshine, daytime breezes and cool nights. The loess soil, together with this climate take their part in the creation of a unique terrain, thanks to which, the vineyard cultivates small grapes, with thick skins and intense flavors. This all contributes to a complex wine, rich in tannins.
